Did the server reset or something because I am very confused. Recently the server has been in maintenance so I don't know if we are converting to the new season from BETA or what's going on, please fill me in.
What happened to the Dynmap

The server is currently transitioning from the beta to full release, which will be Saturday at 2:00 pm EST.
Yeah, server is currently under maintenance and will be up on Saturday, 7PM Central European Time (CET) (Season 7 starts)
I don't know when did you check the map last time, but the server is updated to 1.16.5. so that's why the map looks more real and different than before.
